Over a year ago I was shredding potatoes and carrots with my Kitchenaid chopper/blender/food processor/whatever thing. It's the kind you can make a mixed drink with - but also has a smaller unit to chop things up, or use a slicing/shredding blade. It works great - unless you force it, jam it, or overpack it. I did all three! Guess what I burned up? The plastic in that little unit. Ugh. I smelled burning plastic - well... I found melted plastic - oops. So much for that. Guess I need to buy some spare parts.
Anyway - I was going to use that fancy part of my food processor to make this ice cream - instead, I used the blender. Well imagine a bunch of whole frozen strawberries in the blender not doing very much... yep - just sitting in there. Last time we did something like this Andy chewed up a wooden spoon in the blade - oops. I added the sweetened condensed milk and moved a few of the berries around and we were in business!! Whirling pink wonderfulness was going in circles! I poured it into my fancy homemade ice cream container and tossed it in the freezer.
The next day we popped open that container and took some scoops. It was good, kids said it was too cold. Um... it's ice cream - it's supposed to be frozen. (shaking my head) I think next time I'd add some vanilla or something to enhance the flavor. Andy can't wait to try this with raspberries from the bushes this summer! I can see using this method with peaches too! Oh, peaches and strawberries! Yum!! Bring on summer and all the summer fruit!!
2 Ingredient Strawberry Ice Cream
1 pound strawberries
1 can sweetened condensed milk
Trim strawberries and freeze on cookie sheet. Add to blender or food processor with a can of sweetened condensed milk. Combine until strawberries are chopped and mixture resembles a milkshake. Freeze in freezer for 4 hours, scoop and enjoy.
