Fruit Salad - Yummy Yummy

I live in a world where fruit is not my friend. Like really not my friend. As in... it actively wants to kill me. Problem is - I love it. Ugh! How can you not eat a yummy fruit salad? When it's tossed with fruit that makes your throat close and your tongue swell up... well that's a deal breaker.
Andy had told me about a fruit salad his mom made that had a box of instant pudding - well - call me sold. When my kids also starting having issues with the same fruits I had issues with - I started making this fruit salad - a lot. We generally have all of the ingredients in the house, it's easy and fast, it's fresh, stores in the fridge well, and we love it. I mean we LOVE it. We even bring the ingredients with when we camp and make it while camping. It's nice to be able to make something so fresh on the fly that is such a winner.
So... make this fruit salad... if you like and can add other fruit - go for it. I think pineapple and mandarin oranges would be a perfect addition - Andy would likely knock it out of my hand... whatever details.

Vanilla Pudding Fruit Salad
1 box install vanilla pudding mix
2 cans sliced peaches in juice
1 pound strawberries sliced
2 pears - chopped
2 apples - chopped
Pour cans of peaches in large bowl. Cut with a knife to make smaller pieces. Add pudding and stir until all powder is absorbed. Add rest of fruit and stir to mix.
Ready to eat immediately but even better when allowed to sit for 1 - 2 hours for sauce for form.
P.S. there's a song Fruit Salad - Yummy Yummy - my kids sing it - it's annoying... and now it's stuck in my head... so there you go.
