My life has become filled with meetings. Join church council they said - it's two meetings a month - they said - they were not really all that... correct... let's be honest. One of those meetings a treat was brought - a cinnamon pecan loaf that looked amazing - but being on a healthier eating kick... I passed on it. I didn't want to pass on it - but I did. Well, remembering that loaf, who the recipe was from - I found it online and Andy decided it looked too delicious not to make. A very easy recipe and a quick bake.
We had it for Sunday breakfast and my entire family ate it! No, really they did!! That never happens! My kids are the prince and princess of cereal for breakfast - but they ate this delicious loaf. So did we. Yum. Am I still on a healthy eating kick? Absolutely - but I can still fit in delicious things when I want to. This one is certainly worth working in.
Cinnamon Swirl Bread
1 1/3 cup sugar
1/2 cup finely chopped toasted pecans
2 tsp ground cinnamon
2 cups all-purpose flour
1 tsp baking powder
1 egg
1 cup milk
1/3 cup vegetable oil
1. Preheat oven to 350's. Coat the bottom and 1/2 inch up the sides of a 9 x 5 inch loaf pan in nonstick spray. In a small bowl stir together 1/3 cup sugars, pecans, and cinnamon.
2. Stir together the remaining 1 cup sugar, the flour, baking powder, and salt in a large bowl. In a medium bowl beat egg with a fork; stir in milk and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy).
3. Spoon half of the batter into the prepared pan. Sprinle with half of the cinnamon mixture. Repeat with remianin batter and cinnamon mixture. Using a thin metal spatula or table knife, cut down through the batter and pull up in a circular motion to marle the cinnamon mixture.
4. Bake 55 to 60 minutes or until a toothpick inserted near center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan. Cool completely on a wire rack.
