The wonderful world of healthy eating has us trying all sorts of different ideas and healthier ways of eating. This weeks attempt was a turkey meatloaf. I remember my mom making a turkey meatloaf a long long time ago that was delicious - SO good. I have no clue what she had in that recipe - but it was good.
I found a recipe that looked good - had herbs that we were growing and I could make it ahead. I added onions because - why not add onions?!
When it came to baking up this beauty, I painted it with ketchup, used my new handy dandy meat thermometer, and off to the races. I made some boxed stuffing with added fried celery and onion - again because delicious! It was like thanksgiving dinner - kind of. Ok, maybe not thanksgiving dinner - but it was very good. If anyone missed the beef, they sure didn't say they did. Kids and adults both cleared their plates and enjoyed.
I'm glad that I can cook in a healthy way and still have good down-home comfort food. Looking forward to our next cooking adventure, hopefully, all of us will be members of the clean plate club.
Fool-Proof Turkey Meatloaf
1 ¼ pounds extra-lean ground turkey breast 93% lean
¼ cup plus 2 tablespoons ketchup
1 teaspoon Worcestershire sauce
2 garlic cloves minced (1 tablespoon)
1/3 cup plain breadcrumbs
1 teaspoon dried thyme
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Preheat the oven to 350 degrees F. In a large bowl, combine the turkey, ¼ cup of the ketchup, and all remaining ingredients and mix well with your hands. Transfer mixture to an oiled baking dish and form it evenly into a loaf shape.
Spread the remaining 2 tablespoons of ketchup over the top and sides of the loaf. Bake for 40 minutes.
Slice and serve immediately.
