Cake Mix Makes Cookies - Minds Blown

Sometimes you are offered a challenge and you take people up on it. The challenge was cake mix cookies. My coworker made them and she said they were awful. I asked how that could possibly be? I offered to bake cookies if she brought in a cake mix and chocolate chips - and she did! First things first, these are NOT Chocolate Chips Cookies. These are not the Toll House Recipe - they do not have brown sugar and butter in them that make them that specific delicious cookie. These are yellow cake mix with chocolate chips in them. They are delicious in their own right. Soft, sweet, delicious. But don't confuse them with something they aren't meant to be. If you want Toll House - you need to make that recipe. If you want something easy, quick, and good - make these.

Cake Mix Cookies - Vanilla with Chocolate Chips
1 (18.25 – ounce) box yellow cake mix
2 eggs
1/2 cup vegetable oil
1 cup chocolate chips

Instructions:
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a large bowl mix together cake mix, eggs, and oil until smooth. Alternately you can do this step in the bowl of your stand mixer with the paddle attachment, mixing ingredients on low until combined.
Mix in chocolate chips until evenly incorporated.
Using a medium (2- tablespoon) cookie scoop portion the dough onto the prepared cookie sheet 2- inches apart. Bake for 9-10 minutes, or until lightly golden at the edges.
Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring to a wire rack.
