Once a Year Deliciousness

Question - do you color eggs at Easter? If so, what do you do with said eggs? We... color them, take pictures with them, then let them sit in the fridge until we wonder what on earth to do with them. Andy will eat hard-boiled eggs, but it's a sometimes food for him. He's not always super excited about them. Something he IS always excited about is Egg Salad - and toss that on Rye Bread - it's a sure winner. I split my eggs up and did half deviled eggs and half into egg salad, both recipes are from my mom, with some additions from Andy. He wanted to add some celery for some crunch and a bit of mustard - so additions were made. This egg salad disappeared in 2 days - I'll admit to having some and it was great! Maybe we'll even consider boiling eggs more than once a year...

Egg salad:
Hard cooked eggs cooled and peeled,
I use my pastry blender to cut up the eggs
Add dried minced onion and chopped celery to taste
Salt and pepper, just a little bit
Mix in Miracle Whip a little at a time, add a squirt of mustard.
