Lazy Lady's Chicken Dinner

The life of remote learning, working full time from home, and being involved in too many volunteer groups, makes one tired. Sometimes cooking dinner seems like something I really don't care to do - but take out isn't always economical or healthy. in reality, pulling myself off the couch and making this dinner was easy. By time the first bake on the onions and garlic was done, I had the chicken prepped and the liquids ready to go in. Tuck in the oven for a while... go sit for a bit.... come back uncover, go sit a bit longer. Convince your husband to make a veggie and dinner is done.
This chicken was great! I might season the rice a tad next time? But SO good. The kids loved it too! A winner of a chicken dinner…

Oven Baked Chicken and Rice
5 bone in skinless chicken thighs
1 onion chopped
2 cloves garlic minced
2 tbsp butter
1 1/2 cups uncooked white rice
1 1/2 cups chicken broth/stock hot
1 1/4 cups water hot

Chicken Rub:
1 tsp paprika powder
1 tsp dried thyme
1 tsp garlic powder
1 tsp onion powder
3/4 tsp salt
1/4 tsp Black pepper

Preheat oven to 350°F.
Scatter onion and garlic in a 9 x 13 baking dish , then place butter in the center. Bake for 15 minutes (check at 12 minutes, mix if some bits are browning too much).
Meanwhile, mix together Chicken Rub. Sprinkle on both sides of the chicken.
Remove baking dish from the oven. Add rice then mix.
Place chicken on rice. Then pour chicken broth and water around the chicken.
Cover with foil, then bake for 30 minutes. Remove foil, then bake for a further 20 minutes until liquid is absorbed.
Stand for 5 minutes, then remove chicken and fluff up rice. Garnish with parsley or thyme if desired, serve and enjoy!
