Lesson learned... don't ask what someone thinks about dinner if you don't really want to hear it. Also don't ask someone about dinner who has had a rough day and had to wait for an hour at the oral surgeon for them to just wiggle something in your mouth and send you on your way.
So I made this pasta. It has all things in it we like, turkey sausage, broccoli, onions, garlic, parmesan cheese... All together the kids and I liked it. Sure I added too much salt, but I said that up front... when I asked Andy what he thought? He took a bite then gave me five things he'd change about the recipe. I just sat dumbfounded. Um... Ok then. This recipe was a nice hot steamy cozy dish for chilly Monday night. It was good to have a one pot meal that my kids gobbled up. Joke is on Andy... the next 5 nights of meals is ALL chicken... he's going to sprout feathers by the end! At least next week has a tad more variety to the menu... for now.
One Pot Smoked Sausage Broccoli Pasta
1 tsp olive oil
1 yellow onion diced
3-4 cloves garlic minced
1 13 oz pkg Turkey Smoked Sausage - cut into rounds and then in half
2 cups Chicken Broth
1/2 cup 2% milk
1/2 tsp Lawry's Seasoned Salt
8 oz (dry) noodles (orecchiette, medium shells, elbows, bowties will work)
5 cups fresh broccoli florets
1.5 oz freshly grated parmesan cheese
salt and pepper (to taste)
In a large skillet heat olive oil over medium-high heat. Add in diced onion, minced garlic, and the slices of turkey smoked sausage. Cook until sausage is browned and the onion is softened.
Stir in chicken broth, milk, seasoned salt, noodles, and broccoli florets.
Bring to a boil then cover and reduce the heat to low. Continue to simmer for about 12-14 minutes or until the liquid has reduced and the noodles are cooked through.
Take off heat and stir in grated parmesan cheese! Enjoy!
