Extra Veg - Hold the Tuna

Having company over on a Friday night can be tricky, it’s doable but sure is tricky. We had wanted to invite my folks and friends over for dinner but Saturday was booked and Sundays we try to leave open. What to make for a side for Friday night on a really busy week? How about macaroni salad? Last summer we were by Andy’s folks and his mom made this really yummy noodle salad. She gave me her recipe and it’s a winner. I did add some seasoning salt because I’m the salt person. This recipe does not disappoint. Andy has been eating bowls of it ever since. He leaves his bowl out “just incase he wants more”. My kids? Meh… they like fruit salad more. Make it ahead and let it sit – it gets even better. It’s almost like my mom’s tuna salad… minus the tuna – I’m OK with the lack of tuna…

Macaroni Salad
16 oz elbow macaroni
6 hard-boiled eggs chopped
1 cup diced celery
1 cup diced green pepper
1 large onion diced
1 cup Hellman’s Mayonnaise
2 Tbsp Vinegar
1 Tbsp Dijon mustard
1 tsp sugar
1 tsp salt
1 tsp seasoning salt
½ tsp pepper

Cook macaroni as directed. Drain and cool with cold water and drain. Chop eggs and all veg. Dressing is the remaining ingredients. Add veg and eggs to cold noodles and stir in dressing. Tastes better if made the day before.
