Nicholas is a big fan of chicken legs, but I have yet to figure out a recipe that he really likes. This came close. Pretty sure he’s still after fried chicken with crispy greasy skin and well… that’s just not coming out of my kitchen so… good luck kid. These chicken legs were pretty darn tasty. I opted to cut away as much skin as I could because… no thank you. We peel it away anyway… why not just bake it without. I used a rake so they didn’t sit in grease and they were good. The funny part about chicken legs, Nicholas thinks he wants to pick it up like a cave man and eat off the bone – nope… “can you please cut this off” – sure buddy… no problem.
The original recipe suggested avocado oil – yeah… no, allergic to that so I just use regular vegetable oil, works just fine.
Easy Oven Baked Chicken Legs
Ingredients
3 Tbsp high heat cooking oil
1 Tbsp Italian seasoning
1 Tbsp Onion powder
1 Tbsp Garlic powder
10 chicken drumsticks
Instructions
Preheat the oven to 425°F and line a baking sheet with foil.
Add the cooking oil and spices to a large bowl and mix together.
Add in the chicken legs and toss with the spice mixture until they're evenly coated.
Place in a single layer on a lined baking sheet.
Bake for 40-50 minutes, or until chicken is fully cooked and reaches 165°F as an internal temperature when poked with a meat thermometer.
