French Toast - good for here there and camping everywhere

I love French Toast… I just do. It’s one of those easy comfort meals I can make when I don’t know what else to make. Recently we found French Toast is even MORE amazing made with homemade French bread. But one step better? Is that possible? Oh my yes, homemade Challah bread. What? Giving your egg bread an egg bath?! Is that even allowed… Oh my yes, and it’s amazing. We make French toast a lot when we go camping. It’s east to make the mix in a jar to store in the cooler. No need to bring eggs with camping and do the cooler dance with raw eggs… crack and mix them before you leave in a jar, shake it up, pour and go. When we camp I use an electric skillet for ease of cooking. I cook almost everything in that skillet when we camp! I even make French bread to take with to camp to feel even more special. So… bottom line… this is good for any time of the day. Breakfast for dinner is a favorite in our house – so is this French toast.

Erin’s French Toast
8 eggs
¼ cup milk
2 tsp cinnamon
2 tsp vanilla extract
Bread of choice (French Bread and Challah are wonderful)

Mix up eggs, milk, cinnamon and vanilla together in pie dish. Soak each side of bread. Lay in hot skillet sprayed with vegetable oil spray. Cook on both sides until golden brown. Top with butter, syrup, powdered sugar or however you enjoy your French toast.
