Guess how many times you can boringly bake chicken before your family gets tired of it.. way less times than I've done it. I mean I could have asked Andy to grill but it was cold out, meh... feeling mostly blah this week and decided to try something new with our chicken. I was hoping for chicken thighs but well, grocery shopping is an adventure lately - what will they have? Almost like the TV show Chopped, it's kinda what you want, mostly not - try to make a meal your family will eat an not push around their plates for an hour and a half... yeah... my.life. Anyway... Saw this easy Chicken Rice Casserole - it was called 4 ingredient... but it’s like 7... apparently salt, pepper and water don't count? I also used garlic salt instead of regular salt because I’m fancy like that. This recipe was wild to me... you put the chicken in first, then the rice and stuff on top, don't mix it around.... just layer it. I was not sure how it would go, but I tossed it in the over and ran out the door to get the kids from school. Thankfully it turned out really well. The chicken was cooked well and the rice was very tasty. Just added a bag of microwave pees and ta da - dinner is done! And well... one kid did push it around her plate for 90 minutes but that's every day with everything... ugh...
Chicken Rice Casserole
4 chicken breasts
1 cup long grain white rice uncooked
1 ½ cups water
1 package onion soup mix or use homemade
10 ounces cream of mushroom soup condensed
Instructions
Preheat oven to 325°F.
Spray 9×13 pan with cooking spray. Add chicken breasts and season with salt & pepper.
Pour uncooked rice over chicken. Sprinkle with onion soup mix.
Combine mushrooms soup and 1 ½ cups of water. Pour over chicken.
Cover and bake 1 hour 30 minutes or until rice is tender.
