Baking up magic on a Saturday morning

I had the itch to bake something… I wasn’t overly picky about what I wanted to bake. I’d saved this recipe thinking it looked pretty good – thought my family might even give it a try since they are coming around a little more and more to chocolate. Nicholas was my baker of choice – he wanted to help. He LOVES the sifter. We did not have regular chocolate chips – so we used mini, I thought it was a great idea! Turns out that made things too chocolatey. The cake came out of the bundy like magic. Beautiful! Nicholas wanted to give it a try first. “I like the cake part but not the chocolate.” Hrm… I tried it… not the biggest fan. Andy tried to… “Meh” – Bronwyn wouldn’t even look at it. Well crud. Nothing about the ingredients were weird – how was it that none of us really liked it? I brought it to work? It all went in a heartbeat. Well hrm… still scratching my head – turns out one of my coworkers told me it had too much cinnamon… Oooohhhhh…. I didn’t even consider that. Nicholas told me to measure it with my heart… I did the proper amount – but maybe the chocolate and cinnamon were an wonky combo. Anyway… my work peeps liked it… so I’d still call it a win.

Chocolate Chip Banana Bundt Cake
3 large eggs
1/3 cup vegetable oil
2 medium ripe smashed bananas (About 1 cup)
1 cup whole milk
1 Tablespoon cinnamon
1 15.25 oz box White Cake Mix
1 cup semi-sweet chocolate chips *toss these in about 1/2 cup of flour before adding if you don't want all the chips to sink to the bottom.

Instructions
Preheat the oven to 325 degrees and prep your bundt pan with a swipe of shortening and a sprinkle of flour. Set aside.
In a large bowl, whisk together all the ingredients except for the cake mix and chocolate chips.
Sift in the cake mix toss in the chocolate chips, and gently fold it in. Add to prepared bundt pan. Bake for 40-45 minutes, or until the center of the banana bundt cake is finished baking.
Let cool in the pan for 1 minute, then flip the bundt out onto a cake stand or wire rack to cool completely. Enjoy!
