Because Chocolate + M&Ms = Happiness (for most people)

Because I know teachers like chocolate, my pick for teacher appreciation cookies was this yummy chocolate M&M cookie. The kids agreed this was a yummy cookie – even though it’s chocolate. This one was easy to mix up and made a smaller batch so we weren’t left with tons of left over cookies. The kids loved rolling them in mini chocolate chips and mini M&Ms. We ended up bagging all three cookies into a little gift bag, with a tag that said “We appreciate all you do” that I had the kids names on. The kids wrote on the tags who the bag of cookies was for. We opted to give them to the principals, assistant principal, nurses, teachers, office staff, gym, art, and music teacher. ALL the people! The kids loved being able to run around school and deliver their packages and they felt special making others feel special. Maybe next year I’ll think ahead and maybe try to make cookie ahead instead of all of them in one night. But hey – what’s the fun in that?

Double Chocolate Chip M&M Cookies
Ingredients
½ stick unsalted butter, softened 1/4 cup
¾ cup brown sugar
1 large egg
1 tsp vanilla extract
1 cup all purpose flour
¼ cup cocoa powder
½ tsp baking soda
¼ tsp salt
To top the cookies:
1 cup mini m&ms
1 cup semi-sweet chocolate chips
Instructions
Preheat the oven to 350ยบ F.
In a mixing bowl beat the butter and brown sugar with an electric mixer for 1 minute, or until combined. Add in the egg and vanilla extract, beat again.
In a separate small bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to wet ingredients, mixing by hand with a spatula. The batter will be thick.
Use a cookie scoop to drop dough balls onto a silicone lined baking sheet. Press mini M&Ms and chocolate chips all around the outside of the dough balls.
Bake for 9-11 minutes.
Allow the cookies to cool to the touch on the baking sheet (about 15 minutes) then move them to a cooling rack.
