So I make this pizza casserole – it’s great! It’s easy – it’s quick, but Aldi stopped selling baking mix. Ok, no worries – head to Target – almost $6 for a box of baking mix – holy cow! No thanks! The problem is, I only get baking mix to make this recipe. I don’t use it for anything else – at all. So paying $6 for a box of mix that likely will get old fast didn’t appeal to me – so I did what I always do – go to google and find a way to make it. Thankfully I found this recipe and bonus – I had all the ingredients. Making it in my chopper made it a breeze. Sure I had to make it in two batches but that worked out just fine. Our pizza casserole turned out great – family was happy and now I know how to make this without anything special on hand. Win, win.
Homemade Bisquick
Ingredients
6 cups all-purpose flour
3 tablespoons baking powder
1 tablespoon salt
1 cup vegetable shortening, cubed
Instructions
Add the flour, baking powder and salt to the bowl of a food processor.
Pulse ingredients for about 15 seconds.
Add in the vegetable shortening and pulse the processor until the mixture resembles cornmeal.
Place homemade Bisquick into an airtight container and store within the refrigerator for up to 3 months.
