The Comeback Bar

So this recipe lives here already - but the photos are gone... thanks Google! Just thanks. So here we go again. My mom's Carrot Cake recipe. She calls them Carrot Bars, they've made a comeback in my house. Mostly because for Easter I asked my mom to make them Gluten Free for some of the boys in our family (thanks Celiac!) and Nicholas feel in LOVE with these bars. Andy had a meeting and we were trying to figure out what to make - Nicholas decided these bars were it. Now I shop at Aldi - this we know... Aldi doesn't have the best selection of baby food... and honestly - I don't even know what 3 small jars is anymore. So I steamed some carrots we had and mashed them up - there we go... carrots! These bars went over great and I brought left overs to Wisconsin - 6 AM my father in law was mowing them down... so yes, these are great and will for sure need to make again soon.

Carrot Cake
What you need!
2 cups sugar
4 eggs
1 1/4 cups oil
3 small jars strained baby carrots (baby food)
2 cups flour
2 tsp Baking Soda
3 tsp cinnamon
1 tsp Salt

Frosting:
8 oz cream cheese
1/2 cup butter
3 1/4 cup (1 box)confectioners' sugar
1/2 tsp vanilla

What to do!
Preheat oven to 350 degrees. Beat together sugar, eggs and oil. Add baby carrots, flour, baking soda, cinnamon and salt. Bake on cookie sheet for 35 min. Mix frosting and spread on bars when cool.
