Pretending to eat green beans

Things my family loves - porkchops, apples and sweet potatoes - how could we not love them all bundled together in one sheet pan meal? This recipe was so easy to toss together - it just took some time in the oven to bake. My expert potato peeler was on the job for the potatoes. She actually LIKES to peel potatoes - I know... it's crazy - crazy awesome. The glaze seemed like it could have been more. I did use 6 bone in chops - because that's what I could get. We baked this up and pretended to have a wonderful bowl of fresh green beans. We would have had one if I'd remembered to get some out of the fridge and nip them... but I didn't. So we all pretended to enjoy some green beans too - well Andy didn't. He just looked at the three of us like we were crazy - that's not an uncommon occurrence.
I baked these about 10 minutes longer than stated just because the chops were thick, but they turned out great. Andy, who isn't always all about my new recipe ideas, ate his fill and seemed content with a non-veggie dinner.

Sheet Pan Honey Glazed Pork Chops with Sweet Potatoes & Apples

Ingredients
6 boneless pork chops
3 sweet potatoes peeled & cut into cubes
2 red apples cored & sliced
2 tbsp oil
2 tbsp honey
2 tsp fresh thyme minced
2 tsp garlic powder
Salt/pepper to taste

Instructions
Preheat oven to 375 degrees. Spray a baking sheet with nonstick cooking spray or spritz with olive oil spray.
In a medium bowl, whisk together oil, honey, thyme, garlic powder, and salt/pepper to taste. Add in pork chops and sweet potatoes and toss until all ingredients are evenly coated with glaze.
Spread sweet potatoes and pork on a baking sheet. Add apples and bake for about 25-30 minutes or until sweet potatoes are tender, and pork is thoroughly cooked. If you want your pork and sweet potatoes to be a little crispy, Broil on high for about 5 minutes.
