Sprinkle Budget 2022 Update

Covid messed up the sprinkle usage and budget in our house. Wilton didn't have their outlet sales and we used a LOT of sprinkles since we did a lot of baking. Meanwhile we are sitting pretty with tubs of jimmies and haven't really used them, they were hiding in the back.. These sprinkle cookies were the best use of jimmies I've found in a long time.
Growing up, we had a local baker that had these amazing butter cookies coated with sprinkles. These remind me of those cookies. And bonus my kids LOVE them.
The Wilton Outlet sale IS back... but it's not really close to me. Sure I'd love to go - my mom and even went but the sprinkle room wasn't too impressive... yes they have a sprinkle room. Maybe we'll try again at the next one.
These cookies are perfect for any holiday because you can customize the sprinkles to the holiday or occasion. Or just because you want sprinkle cookies. That works too.

Sprinkle Cookies
1 cup butter room temperature
1 cup granulated sugar
2 eggs
3 tsp vanilla extract
2 1/4 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
sprinkles

Preheat the oven to 350°.
Either using a stand mixer or a handmixer, cream together the butter and sugar. Cream for about two minutes or until light and fluffy.
Scrape down the sides of the bowl. Add in the eggs and vanilla and mix until well combined.
Add in the flour, baking powder, and salt. Mix until fully incorporated. The dough will be very sticky.
Pour your sprinkles into a bowl. Scoop the cookie dough out of the mixing bowl and place in the sprinkles.
Roll the dough around in the sprinkles until it is fully covered. Reshaped the dough into a ball before placing on a parchment paper lined cookie sheet.
The cookies will spread quite a bit while baking, so I suggest limiting each cookie sheet to about eight cookies.
Bake at 350° for 10 minutes. Cool completely on the pan.
The cookies will stay fresh in an airtight container for 2 to 3 days.
