Once upon a time we were with family in Iowa and had taco pizza from Casey's - it was amazing. They even had these cute little sour cream packets - I didn't have any - not a fan of sour cream but dang they were cute. When we were in Michigan a few years later our hotel/waterpark was next to a Casey's so we ordered a taco pizza and a cheese pizza. Worst pizza I think we've ever eaten. Now that we have a Casey's in town - I'm tempted to try a pizza from there... but that last one - oh man... it left scars. Instead I opted to try to make my own. The only thing I forgot? The chips! Add some Doritos on top for some crunch. This taco pizza was easy and hit. I did NOT use an entire can of refried beans... I mean I could have, but that's not my favorite thing but I really didn't taste it. I also used premade pizza dough because I had it. Sure I have my mom's great recipe for pizza dough - but I wanted to try out this frozen ball of goodness. I let it thaw all day then popped it into the cool oven but turned the light on to get it to rise a bit.
it was easy to put together and tasted yummy. The kids could put whatever they wanted on it and gussy it up or dress it down. Andy said he enjoyed yet another kind of taco - tacos are a favorite. Yay for Taco Pizza!
Taco Pizza
1 pizza dough recipe (or premade dough from store)
15 ounces refried beans
1 pound lean ground beef
1 ounce packets taco seasoning
2 cups shredded Mexican blend cheese
3 cups shredded iceberg lettuce
2 tomatoes, seeded and chopped
optional toppings: taco sauce or salsa, sour cream
Preheat oven to 350 degrees F.
In a medium bowl, stir the dough mix together with the required water (check the package) until well combined. Let rest for at least 10 minutes, or up to 2 hours (one hour or more is ideal).
Meanwhile, in a large skillet over medium-high heat, cook the ground beef, breaking it up with your spoon. Add the taco seasoning and cook until the meat is cooked through. If using a fattier meat, add the taco seasoning after draining off any grease and cook for a couple of minutes more.
Spread the dough out over a well greased pizza pan. Spread the beans over the dough and top with the taco meat and shredded cheese.
Bake at 350° for 20 minutes, or until the crust is cooked through.
Let cool 5 minutes, then top with lettuce, tomatoes, taco sauce or salsa and a dollop of sour cream.
