I haven't been to Dollywood but if I went - I would get the cinnamon bread. Rumor has it that it's the best cinnamon bread you will ever have. I've tried a knock off recipe before and it was all homemade and quite amazing. I wanted to give it a go with frozen bread dough since apparently that's THE recipe. I bought a bag of bread dough hunks and figured I'd give it a go for an afternoon snack. I simplified this recipe down to one loaf, it was for three. I wasn't sure I wanted to make three - until we tried it - then I knew I should have made three. Premade dough is amazing - it just is. It puffs up beautifully and is perfect. I used a pastry brush to put the butter on and sprinkled the cinnamon on - so any extra I could save for the cinnamon sugar bear. After getting this iced I asked who wanted some - no one. But, but!!! It said to eat it WARM! Come on! Nope... so I went for a walk instead. Decided I'd try again when I came home - oh!! I had 2 takers! So the three of us ate - the entire loaf. Andy had about half of it. May be he was hungry - but I vote he was just in love with the bread - because it was amazing. I think I might have to make it again soon!!
Easy Cinnamon Bread
1 loaf frozen bread dough (Rhodes Bake - N - Serve)
1/4 cup butter, melted
1/2 cups granulated sugar
2 tsp ground cinnamon
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 tablespoons milk
Place frozen loaves on a tray and thaw at room temperature. This may take 3 to 4 hours. You can also thaw in the refrigerator overnight.
Spray 8-inch bread pans with non-stick cooking spray. Set aside.
Cut 4 deep cuts into each loaf of bread, nearly all the way through, leaving just a small piece still connected at the bottom.
Coat bread completely with the melted butter, making sure to coat the inside of each cut very well.
Mix the sugar and cinnamon together in a wide dish and roll the bread gently in the cinnamon sugar. Make a thick coat and stuff each cut with lots of cinnamon sugar.
Place a loaf of bread in each pan and cover with a light tea towel. Allow bread to rise in a warm area, until doubled in size, about 1 hour.
Preheat the oven to 350°F.
Bake bread for 20 to 25 minutes. Loaves will be golden brown and when thumped on the bottom should sound hollow. Remove bread from oven and allow bread to cool for about 10 minutes.
While the bread is cooling, mix up the icing. Combine the powdered sugar, vanilla and 2 tablespoons of milk and whisk until smooth. Add extra milk as needed, until desired consistency. Drizzle icing on top of warm bread and serve!
