Andy is not a fan of the premarinated pork tenderloins. I grew up with them but he is not so much a fan. Our Aldi sells non marinated pork tenderloin two of them in a two pound package, so two of them is a lot for the four of us. Now that I have a fancy Meater+ thermometer I know I more comfortably cook meat without killing it, I opted to try this recipe since my folks were coming for dinner. Here's the wrinkle... I get off work at 2:30, I needed to get B at 3:05, N at 3:35, Andy had a 3:30 dentist appt, dinner was to be at 4:00 and we needed to be on the car on the way to the school musical at 5:00. I had zero wiggle room. Thankfully I worked from home that day so I could prep a LOT on my lunch break, got as much ready as I could so after work I could toss it together and get it in the oven. That thermometer saved me from killing the meat since it got done WAY faster than I thought it would. I pulled it and let it set. Put the potatoes back in to carmalize them. This turned out SO good. I did double the recipe and truth be told I used an eighth of the Chili powder. Andy is the only one who would love it... so I opted to reduce it, still use it, but reduce. We all agreed it was a delicious dinner. Really with the prep ahead, it wasn't that much work. This is a certainly make again!
Roast Pork Tenderloin with Brown Sugar Sweet Potatoes
1/4 cup packed brown sugar
2 teaspoons Chili Powder (I did 1/4 tsp)
1 teaspoon salt
1/2 teaspoon Ground Cinnamon
1/2 teaspoon Garlic Powder
2 medium sweet potatoes, peeled and cut into 1-inch cubes
1 medium onion, cut into thin wedges
2 tablespoons butter, melted
1 pork tenderloin, about 1 pound
Preheat oven to 375°F. Mix brown sugar and seasonings in large bowl. Reserve 2 tablespoons. Add sweet potatoes, onions and butter to bowl; toss to coat well. Arrange on large, shallow, foil-lined baking pan sprayed with no stick cooking spray.
Roast 10 minutes. Rub pork tenderloin with reserved seasoning mixture. Push sweet potatoes and onions to one side of pan. Place pork tenderloin on other side.
Roast 25 minutes or until pork is desired doneness and sweet potatoes are tender. Slice pork and serve with sweet potatoes and onions.
