When you plan your afternoon/evening too tight - it's a good thing to have an easy to make dinner. I entirely forgot we had meeting with our financial advisor at 3PM... I was hoping to get groceries after work - nope! Talking about retirement instead. Thankfully this recipe tossed together fast and I could easily run and toss it in the oven in the middle of the meeting. It's no secret that I'm not the biggest fan of enchiladas, but this worked out very well. Bronwyn and I even liked it. Andy and Nicholas couldn't get enough. This one certainly goes on the "make again" list according to Nicholas. That's a win.
Lazy Enchiladas (Frozen Taquito Casserole)
Ingredients
1 (20 pack) frozen taquitos
1 (16oz) can refried beans
1 (19oz) can enchilada sauce
2 cups shredded cheese
sour cream, cilantro, onions, tomatoes (for serving)
Instructions
Preheat oven to 400 degrees F and grease a 9x13 baking dish.
Scoop the refried beans into the bottom of your dish and spread them out evenly with the back of a large spoon.
Place the frozen taquitos in a single layer over the refried beans, placing four of them in the opposite direction in order to cover as much surface as possible.
Evenly pour the enchilada sauce over top and bake for 20 minutes.
Remove the dish from the oven and sprinkle with shredded cheese.
Bake for an additional 5 minutes, or until the cheese is melted.
Enjoy with sour cream and anything else you'd like such as shredded lettuce, fresh tomato, guacamole, jalapeƱos, etc.
