Tall Sassy Girl turns 11 with a Sleepy Kitty Cake

This year I didn't have to guess how old Bronwyn was turning this year - she kept reminding me - she was turning 11. It felt a little like her birthday just snuck up on us. Usually I bake the cake way ahead, but this time - a day or two ahead instead. I've been using a specific recipe with buttermilk or sour cream but this time, standard box recipe just added a box of vanilla pudding and sprinkles. All the sprinkles. B decided she wanted to make a fondant cat on top of her cake and make paw prints. When it came to making the paw prints, we both decided that was not going to be easy and we'd just pipe those with frosting. I pushed my flower agenda a little asking her about adding some color and flowers to the cake - thankfully she was all on board for some flowers. Hard to believe this girl is 11 already and getting tall! Soon she'll pass me up and she can get things off the high shelves!

Yellow Cake - Make according to the box directions but add box of vanilla pudding and lots of Sprinkles

Vanilla Buttercream Frosting

1 1/2 cups butter, at room temperature (3 sticks)
4 1/2 cups powdered sugar
3 - 4 Tbsp heavy cream
1 1/2 tsp vanilla extract

In the bowl of an electric stand mixer, using the paddle or whisk attachment whip butter on medium-high speed (if using whisk attachment whip on high speed) until nearly white and very fluffy, about 7 - 8 minutes, frequently scraping down the sides of the bowl.
Add in powdered sugar, heavy cream, and vanilla extract and mix on low speed until blended, then increase speed to medium and beat until very light and fluffy, about 5 - 6 minutes, frequently scraping down the sides of the bowl.
Immediately spread over cooled cake or cupcakes.
