It's always dangerous when I get in a rut and ask my family for dinner suggestions. One never knows what you'll get. This time it worked out pretty well. Andy said he wanted Teriyaki Chicken. Well Ok then. That's not something I have made, so on to recipe hunting. Many teriyaki recipes include pineapple, well that's not happening with this girl, but I found this one and we had all the basics! I prepped all the parts and pieces as I try to do when making a dish like this. It makes it way easier to cook when all your ingredients are cut, the sauce is mixed and ready, and your chicken is cubed and ready to go. The rice took the longest, in the rice cooker. Andy asked for a rice cooker for Christmas - a rice cooker he got. I had the girl put the rice together an hour before we were to eat... because it takes an hour to make 4 cups of rice... no really, an hour... ugh. This dish was loved and enjoyed by all! So good. This is a for sure make again recipe, true sign? Andy having a little bowl as a bedtime snack last night... Ok then.
Teriyaki Chicken Rice Bowl
4 boneless skinless chicken breasts, cubed
1 Tbsp. olive oil
1/2 cup low sodium soy sauce
1/2 cup water
3 Tbsp. packed light brown sugar
2 Tbsp. rice vinegar
1/2 tsp. sesame oil (optional)
1 tsp. ground ginger
2 tsp. minced garlic
2 Tbsp. honey
3 tsp. cornstarch
sesame seeds and chopped green onions for garnish
rice for serving
steamed veggies for serving
Heat oil in a large skillet on medium high heat.
Add cubed chicken and brown chicken until cooked through and it is no longer pink.
While Chicken is browning, prepare your teriyaki sauce! In a medium size mixing bowl whisk together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic, and cornstarch.
Once Chicken is browned and cooked through, add your homemade teriyaki sauce to your skillet and continue to cook stirring until the sauce has thickened.
Serve immediately with white or brown rice and vegetables of your choice. Garnish with sesame seeds and green onion
