Making Camping Easier One Meal at a Time

Camping season is upon us once again! With all the constructions around our house we had decided there was no way to get the camper in the driveway this year. It's been sitting all winter in the church parking lot hanging out with some other vehicles being stored. We decided to go see if any critters got in there and get it ready for the season. We also decided we should try to drive it around the parking lot and see if we could practice parking it. Andy did great, I hit a few curbs. We felt pretty good about our practice maneuvers and decided to give it a go - we got it in the driveway on the first try!! We were cheering so excited! Not even any swearing which is pretty good for us. Anyway, this first camping trip we are doing Breakfast Sammies. We did them once last year but I made everything on site, we brought a toaster - the whole works. This time I decided to pre-make them and freeze them. Since we have a microwave, each person can zap theirs and have a hot custom sammie just for them! I needed eggs in slices - like McDonalds and found this method. What's a Sammie? Oh... a toasted English Muffin, Eggs, Bacon or Ham, Cheese of your choice. I made each persons the way they wanted them, wrapped them in parchment marked them with their initial and we are ready for breakfast at least one morning. I love having a fridge and freezer in our camper - it makes SO many things so much easier. These Sammies can be customized however you want to have them. I think the slices of egg are going to make them easier to eat but just as delicious.

Sheet Pan Eggs
12 large eggs
2–3 tablespoons water

Preheat oven to 350 degrees F.
Prepare a 12 x 17 sheet pan with non-stick cooking spray.
Whisk the eggs and water together and pour on the sheet pan.
Bake for 12 – 15 minutes until eggs are cooked through (no loose liquid) but not too browned.
