The discount grocery store we go to sometimes, has Boursin every once in a while. Sometimes it's the non dairy version which is actually very good - sometimes it's the regular. This time they had garlic and shallot so I decided to try this recipe with it! We got the chicken at the same grocery store, so this was a pretty budget friendly meal. This recipe took some prep ahead and the chicken just did not want to get to temp but fear not - we got there. It may have splattered everywhere but we didn't get a visit from Sam or Ella! Phew! I think the only thing I would add to this recipe is mushrooms... mushrooms would have been great with this, otherwise it was great. The pan was clean when we were done, mostly because Nicholas took the last serving as his lunch the next day. I'm thankful that kid likes his left overs for school! I'm pretty sure it's actually a ploy so he doesn't have to make a sandwich. Hey, I say whatever works - works! This will be in the rotation again, especially if we find more Boursin in our fridge.
Boursin Orzo with Chicken
2 tablespoons olive oil
4 boneless, skinless chicken breasts
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt (or to taste)
¼ teaspoon black pepper
1 cup orzo pasta
2 cups chicken broth
½ cup heavy cream
1 package (5.2 oz) Boursin cheese (Garlic & Fine Herbs flavor)
1 cup fresh spinach, chopped
¼ cup grated Parmesan cheese (optional)
Fresh parsley, chopped (optional, for garnish)
Season chicken breasts with garlic powder, paprika, salt, and pepper.
Heat olive oil in a large skillet over medium heat. Add chicken and sear for 4–5 minutes per side, until golden and fully cooked. Remove and set aside.
In the same skillet, toast orzo for 1–2 minutes, stirring constantly.
Add chicken broth, bring to a simmer, cover, and cook for 8–10 minutes until orzo is tender.
Lower heat and stir in heavy cream and Boursin cheese until smooth and creamy.
Stir in chopped spinach and cook until wilted, 1–2 minutes.
Return the chicken to the skillet to warm through. Garnish with Parmesan and parsley if desired.
