Who needs pasta sauce on their ceiling?
How can you make fresh pasta and just use some jarred sauce on top? I guess it wouldn't be that hard to do, but something seemed right about making my own sauce to go with the fresh pasta. The ingredients were very simple and truthfully it was on the way to being a vodka sauce - but I decided since we didn't have any and I wasn't going to buy any - it would be a dry sauce. Andy vetoed the milk intendant - so this sauce because marinara instead of cream based.
The recipe calls for putting batches in the blender and taking it for a ride. See... I have an immersion blender and that makes life so much easier. You stick that baby in the pot and buzz away. No exploding blenders of hot molten sauce. We bout the immersion blender from Aldi when Bronwyn was a baby because we made all our baby food. We were 'those people' who made our own baby food. Mostly because it really was easy and cheap. We did the same for Nicholas, but he ate normal food faster so we made way less baby food. In fact - I just found one last bag hiding in the freezer. Oops!
Anyway - the sauce was very good. I 'might' have burned it a tad bit. Just a tad... but it was still good. It would be perfect for pizza sauce as well. Fresh basil from the garden, garlic, and onions - so very good. Hrm... makes me want to go home and make some bagel pizzas... because I can!
Pasta Sauce
4 medium cloves fresh garlic, rough chopped
1 medium onion, diced
1 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes
olive oil cooking spray, 8 second spray
(2) 29oz canned crushed tomatoes.
1/2 cup fresh basil, chopped
2 tsp balsamic vinegar
1 tsp red wine vinegar
2 Tbsp reduced fat Parmesan-Style grated topping
Directions:
1. In a medium sized pot, spray the cooking spray over the onions, garlic, salt, pepper and red pepper flakes. Cook until softened, around 6-7 minutes on medium heat.
2. Add the crushed tomatoes and vinegars. Cover and allow to cook at a low simmer for 20 minutes.
3. Carefully pour the hot sauce into a food processor, with the fresh chopped basil, then puree until almost smooth. You can also use a blender, in batches.
4. Return the sauce to your pot, add parmesan topping. Stir to combine, then cover and simmer for 5 minutes. Done
