Revolting Family Gets White Rice

My family is about to revolt. They are getting a tad tired of my cauliflower rice. Um... Right. Well... Sometimes I make their version with regular rice so I don't have to "hear" about it. Last night - they weren't so lucky but I did add some minute rice to make them happy and happy they were. Also, it helped that this recipe includes turkey smoked sausage which makes them very happy. I'm truly blessed that my kids don't complain about what I cook - most of the time. There are days where we all sit and wish we'd ordered take out or made a frozen pizza, but not last night. I loved having a one-pot recipe that I could toss together after my "super fun" dentist visit. The night before I did all my chopping so it would be easy to toss together and as easy as it could be.
You could make this recipe will all regular rice or all cauliflower rice - I decided to mix it up so my family would appreciate it more - they did.

Sausage Broccoli Rice Skillet
Ingredients:
13 oz. package turkey smoked sausage sliced
1 small onion diced
1 small green bell pepper diced
1/2 tsp salt
1/2 tsp pepper
4 cloves garlic minced
1 pkg cauliflower rice thawed, drained, microwaved to warm
1/2 cup minute rice prepared
3/4 cup chicken stock or broth
2 cups broccoli florets - bite size pieces raw
1/2 cup sharp cheddar cheese, grated

Brown the turkey sausage in the skillet or dutch oven for 3-4 minutes.
Remove with a slotted spoon.
Saute onion and bell pepper until onion is translucent. Make sure to work the brown bits off the bottom of the skillet.
Add garlic and cook for an additional minute. Season with salt and pepper.
Add broccoli to skillet and cook until bright green.
Add cooked rice and cauliflower rice to the skillet and stir to combine. Continue stirring for 1 to 2 more minutes.
Add the chicken broth and bring to a boil. Reduce heat to low, cover, and cook for 15 minutes.
Stir in kielbasa and cheese.
Serve hot
