Things I do for my family because I love them.
...bake oatmeal raisin cookies
...buy them blue food to eat
...make tacos and fajitas even though clearly cumin wants to kill me.
And one of the biggest and the best?
...make corned beef and cabbage
You see - none of these things are my favorite - or even close to my favorite, but because I love my family - I do these things. Corned Beef - if ever there was a favorite food - next to Chicken Kiev - in my children's hearts... it's corned beef. Andy? That's his favorite too. My opinion? Oh, man, does that stuff stink up my house! It's... fine. I'll eat a little meat but oh man does it stink.
My recipe is a gift from a friend who introduced us to corned beef that didn't give off sawdust when cut - it's actually really tender and falls apart. If I have to eat it, that's what I'll have.
Andy's brother and sister-in-law have a pretty good trade in this corned beef deal... they provide the beer - we invite them to help eat. They seem to like the arrangement - we do too! Then we get to have them over!
What do I eat? Lots of carrots and potatoes, homemade bread that I made, cheesecake for dessert, and a little chunk of meat. My kids and Andy? Plate after plate FULL of corned beef and cabbage. My children eat slimy cabbage soaked in the juice... so strange. They all are so strange! Ok... you want to make this... here you go... Let's just remember who is the most Irish at that table... me... and I'm not all about this at all... but I love my family... so they get to enjoy it... then I light a candle to attempt to vanquish the stink.
Corned Beef and Cabbage (God save you)
4-5 pounds Corned Beef Brisket
2 cans of beer
1 head of cabbage
Place brisket and spices that come with it into the crockpot, pour beers in, fill rest with water to cover the meat. Cook on low for 10-12 hours. About an hour before serving, cut cabbage into 8 wedges and place on top of the meat, submerged in liquid. You may need to remove some of the cooking liquid to make room for cabbage.
Boil red potatoes and steam carrots to serve with.
