Handy Pies Filled with Apply Goodness

A few weeks ago my family had blueberry muffins for breakfast, yuck - blue food. I made some really strange oatmeal, banana, egg muffins and made this apple pie filling in hopes to fill the muffins with them. While that plan failed tremendously, I had some filling left and decided to turn some skinny pizza dough into apple pies. I had an assistant helping me in the kitchen and we opted to use an empanada maker to make our little hand pies. We also use it to make pot stickers so it's not really a unitasker. These little pies turned out great. Next time maybe we'll try peach pies!

Skinny Pizza Dough Apple Hand Pies
1/2 - 3/4 cup water
1 teaspoon yeast
1/2 teaspoon salt
1/2 cup plain Greek yogurt
2 cups self-rising flour

Apple Pie Filling
1 finely chopped apple
2 tbsp brown sugar substitute
1/2 tsp cinnamon
1 tsp corn starch
2 tbsp water

Instructions
Over low heat combine all filling ingredients until thickens. Let cool.
Heat oven to 425.
In a bowl, mix the flour, salt and yeast together. Stir in the yogurt and mix until it starts to combine. Add up to 3/4 cup of water until combined. Start with 1/2 a cup and see how much of the flour is being incorporated. If there is still a bit of loose flour in the bowl, add a couple tablespoons of water at a time, until it forms a ball that you can roll out and knead on your counter.
It might be a bit sticky - but place just a couple tablespoons of flour on your counter, and work that into the dough - it won't be sticky anymore.
Roll out dough very thin, cut circles. Fill with spoonful of filling, wet edges with egg or water, then crimp edges. Cut a slit in the top. Mix egg with a little water and paint on pies. Top with course sugar
Bake 20 minutes.
