Dinner + Breakfast - 1 Hour = Great dish for any time

Things I love, Cinnamon Rolls and French Toast, also a make ahead meal. So guess how much I love a Cinnamon Roll French Toast Bake? Oh my yes. When we somehow landed a dinner date with my parents and a breakfast date with my in-laws back to back on the night we Spring ahead an hour, I knew I'd have to get smart about it. Make ahead items work best, so do big bakes where you aren't having to do tons of last minute work. I found these big ol' loaves of brioche at Aldi and they are so good. One loaf is perfect for this recipe. I ended up getting two since I wasn't sure, now we have an extra loaf for another recipe, or maybe French toast. This recipe is topped with delicious cinnamon crunchy topping then cream cheese frosting. This is even something my kids asked for on leftover night, because yes, it's that good. Don't wait until you have an hour less of sleep to make this, breakfast for dinner would be amazing too!

Cinnamon Roll French Toast Bake
6 cups cubed Brioche bread
8 large eggs
1 1/2 cups heavy whipping cream
1/2 cup light brown sugar packed
1/2 teaspoon ground cinnamon
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt

Brown Sugar Topping
1/3 cup light brown sugar packed
1 teaspoon ground cinnamon
4 tablespoons melted butter

Cream Cheese Icing
8 ounces cream cheese
1 cup powdered sugar
1/4 cup milk or heavy cream

Instructions
Preheat oven to 350 degrees F. and lightly spray 9x13 inch baking dish with non stick cooking spray.
Place cubed bread. Place eggs, heavy cream, brown sugar, cinnamon, vanilla, and salt into a large bowl, whisk to combine. Pour evenly over bread mixture. Mix brown sugar and cinnamon into a small bowl and sprinkle over top of bread/egg mixture. Drizzle evenly with melted butter. At this step you can cover with plastic wrap and refrigerate overnight. Remove and let thaw to room temperature before baking. When ready to bake, bake for 35-40 minutes or until set. Remove and let cool for 10 minutes before drizzling with icing. To make cream cheese icing, place cream cheese, powdered sugar and milk into a large mixing bowl. Whisk gently until smooth and creamy. Drizzle over top of French Toast Bake and cut into squares to serve.
