Perfectly Golden and Melty

My kids love grilled cheese and tomato soup. I loathe tomato soup. The last time I ate it, I was pretty sick and let's just say, once it's come out your nose, you never want it down your throat again. ANYWAY.... Grilled cheese! My family loves it, but I'm not a super fan. I don't know, I like hot ham and cheese sandwiches, but there's something about the buttered bread? Anyway. Grilled Cheese. They love it, but I only have a pan that makes 4. My family often eats 5, maybe 6. Sure I could get out the griddle from the basement, but let's be honest, I'm lazy. Enter in Sheet Pan Grilled Cheese. Wait - What?! You heard me. Basically make your grilled cheese the way you love it, toss it on a baking sheet (I used parchment to save myself on dishes), bake, flip, bake, eat. No worrying about hot spots on the stove or even soggy bread. I noticed that the bread got nice and toasty - that never happened when made these on the stovetop. Maybe I might start liking grilled cheese since this makes the perfect one! Andy would say add pickles and ham, the kids are purists or just picky... hard to tell the difference some times.

Preheat the oven to 450 degrees.
Assemble sandwiches - 2 slices of bread with cheese in the middle.
Butter both slices of bread on the outsides and place on baking sheet.
Bake for 5 min. Flip sandwiches over and bake for another 5 min.
They turn out perfectly golden with melty cheese every time.
