Oh the pandemic – reason of all sorts of crazy things in life. This time? Extra cake mixes and boxes of instant pudding. Why? Well, an almost bake sale… so when I realized it was my 6th anniversary at work and I felt quite like I’d been hit by a truck from my second vaccine from said pandemic (oh irony), a cake mix cookie seemed like a great plan. These cookies came together so fast and baked up so soft and good. I pushed some extra white chocolate chips in the top and did some sprinkles on some too. These were easy, fast and people loved them. Why bake them from scratch if you can use premeasured preboxed ingredients to get the job done?
Chocolate Cake Mix Pudding Cookies
1 box of chocolate cake mix
1 box of chocolate instant pudding mix
2 eggs
1/2 cup of melted salted butter
Mix everything together, roll it out into little 1.5 inch balls, and bake it at 350 for about 12 minutes! And there you have it: Chewy chocolate cookie perfection!
