Last weekend the kids wanted to bake – I was just beat. I did not feel like it, I had no butter softened, didn’t feel like doing it. Felt a little like I failed them. I love baking with my kids and love that they want to bake with me. This weekend I decided I should be prepared with butter and a recipe! I picked these Ranger Cookies for a few reasons. Bronwyn loves Rice Krispies, Andy loves oatmeal cookies, Nicholas just loves to bake, and I’m here for the chocolate. This recipe says to flatten with a fork - nah… we used our hands. These turned out so good. They have some crunch, some chew, and yes, the chocolate.
We had fun baking together and of course eating the fruits of our labor. I’m sure that will be the only one Nicholas will eat, he’s a candy kid… not a baked good kid but he does love baking! But wait… he’s my muffin kid… hrm… ok I can’t figure him out.. but these cookies? Are great… try them.
Ranger Cookies
2 sticks Butter, softened
1 cup Sugar
1 cup Dark brown sugar, firmly packed
2 Eggs
1 teaspoon Vanilla
2 cup Flour
1 teaspoon Baking soda
½ teaspoon Baking powder
½ teaspoon Salt
1 cup Old fashioned oats
2 cup Rice Krispies cereal
1 cup Chocolate chips
Preheat oven to 350 degrees F.
Cream butter and sugar, and brown sugar together.
Add eggs and vanilla and continue to mix until eggs are fully incorporated.
In a bowl combine flour, baking soda, baking powder and salt.
Slowly add flour mixture to the mixer and blend until smooth.
Fold in oats, rice cereal and chocolate chips.
Roll into golf ball size balls and place on a greased cookie sheet. Flatten each ball with the tines of a fork.
Bake for 10 to 12 minutes.
Cool on cookie rack and store in airtight container.
