When the orange kind gross you out...

Andy is not a fan of store bought cinnamon chips. At all. I can somewhat understand, they are… odd. I mean they can be really good – but they can also be cloying and weird. I really like the store bought kind in cookies – but in cinnamon bread? They are a little odd. I’ve seen recipes for making your own cinnamon chips so I gave it a whirl. These turned out great – they stored well in the fridge, sadly the recipe I used them in, was awful, so that was a fail, but these were not. I think these are going to work great – I just need to find a better bread recipe to use them. So need cinnamon chips but don’t want to use the orange store bought kind? Try these!

Cinnamon Chips
2/3 cup granulated sugar
3 tablespoons ground cinnamon
2 tablespoons vegetable shortening
2 tablespoons light corn syrup
1/2 teaspoon vanilla extract

Preheat oven to 200ยบ Fahrenheit.
Line a cookie sheet with a piece of parchment paper sprayed with cooking spray.
Combine the sugar, cinnamon, shortening, corn syrup and vanilla in a medium size bowl.
Use a wooden spoon to combine the mixture until it is well mixed.
Pour the cinnamon mixture on the prepared sheet. Use the palms of your hands to press and flatten the mixture to be about 1/4" thick.
Bake until cinnamon sugar mixture is melted and slightly bubbly. This will take about 40-45 minutes, but watch it closely.
Cool completely, and then cut into small pieces.
