Stale French Bread? No Problem!

I made a batch of French bread last week to eat with soup. The bag I used to store the left overs split and well, after a few days it got a little stale. i stuck it in the fridge because I had a plan! Garlic Bread.
I've tried to make garlic bread with fresh bread and it's just too soft. Give it a few days to get a little crusty? Perfect.
I even used the broiler and I successfully did NOT burn the house down - miracle of miracles. This bread was so good - the kids loved it too. We have parsley in the garden so it's great to be able to use it when we can. Most of our parsley gets dried and turned into parsley flakes - every once in a while we get to eat it fresh and it's worth the effort. (Growing parsley isn't really that much work...)
This spread is very customizable. You can use butter or margarine (we used margarine), add spices and herbs that you like, extra salt – I added salt… You can even make it and store it in the fridge to spread on warm rolls out of the oven – yum. Let’s make another batch and some rolls!

Garlic Bread Recipe
Ingredients
baguette
1/2 cup salted butter room temperature (1 stick)
4 tsp minced garlic
1 tsp garlic powder
2 tsp chopped parsley
1/2 tsp olive oil
Instructions
Preheat oven to 400 degrees.
Cut bread roll in half lengthwise.
In a medium sized bowl, whisk together butter, minced garlic, garlic powder, parsley, olive oil and parmesan cheese until well combined.
Liberally spread garlic butter mixture on each half of bread.
Bake bread for 10-14 minutes or until bread is crisp and top is golden brown.
Cut bread into slices and serve.
