Dry as cork, but seasoned perfectly

Juicy Slow Cooker Turkey Breast... well it was a slow cooker turkey breast recipe... that's for sure. Let's start out with I don't do well with cooking meat. What I 'should' have done for this turkey breast was put a temperature probe in it and set it so I knew where it was... Did I? Nope. About 90 minutes before we were planning to eat I checked the temp and it was 187 - way over where it should be. Nicholas made the rub and got the turkey breast all settled in the crock. The seasoning was great, the smell fantastic... but me - the cook - failed us all. Good thing there was gravy and sides because they saved Thanksgiving! Ok... so did the company. it was a great day - who cares about an overcooked turkey?

Juicy Slow Cooker Turkey Breast

1 1/2 teaspoons garlic powder

1 teaspoon paprika

1 1/2 teaspoons onion powder

1 teaspoon dried thyme leaves

1/2 teaspoon kosher salt

1 teaspoon ground black pepper

2 tablespoons olive oil

4 pounds boneless and skinless turkey breast 1 large

1 cup chicken broth low-sodium

1 head of garlic cut in half horizontally

1 yellow onion peeled and cut in half horizontally

Instructions

In a small bowl, combine the garlic powder, onion powder, paprika, thyme, salt, pepper, and olive oil. Stir to make a paste.

Coat all sides of the turkey breast with the rub.

Add chicken broth to the slow cooker. Place the garlic and onion halves in the bottom of the slow cooker to create a "shelf" for the turkey breast.

Place the turkey on top of the onion and garlic halves in the slow cooker.

Cover and cook 7 to 8 hours on low or 3 to 4 hours on high or until turkey breast is cooked through. Pour drippings over turkey breast before serving.
