Stuffing ourselves with Stuffed Strawberries

No your eyes do not deceive you; those are honest to goodness real beautiful strawberries. Red, sweet and SO yummy. Sure, they came from a hot house somewhere, but shhhh, don’t spoil my bit of summer sweetness. :) A dinner with friends and I’m on for dessert. I’ve wanted to make these again for a while. This time I just found a recipe online and tweaked it. Last time, I did some strange concoction. I made them with the 1/3rd less fat version of cream cheese since… it is fruit folks… may as well try to reduce some of the fat… it’s health food. Isn’t it?

Stuffed Strawberries

What you need!
Fresh strawberries
1 (8 ounce) package cream cheese, softened
1/2 cup confectioners' sugar, or to taste
1 tablespoon vanilla, or to taste

What to do!
Cut the tops and bottoms of strawberries and stand upright on the cut side.
Beat together the cream cheese, sugar, and vanilla until smooth in a mixer or a food processor. Place into a piping bag, or a not so fancy ziptop bag that you don’t feel bad about cutting. Pipe into each strawberry.
I like to melt a little semi sweet chocolate and use another handy ziptop back and make cute swirls….
Refrigerate and eat!

  1. Did you hollow out the strawberries? or just cut off the tops and bottoms? It does seem VERY easy! :)

  2. I usually use huge strawberries and take the white part out... that's it. none of the red part.
