Hot Pot of Pork Roast Goodness

I love the crock pot. I love being able to pile a bunch of things in there, turn it on and have dinner ready when we walk in the door. This time we made up our own recipe. In the picture you’ll see a can of cream of mushroom soup – Andy opted for chicken broth instead. It’s a quick night home for us, so having a nice hot dinner ready when we get home will be great – especially since it’s snowing.

1 pork roast (1.5 pound)
4 large potatoes - chunks
4 carrots – peeled and cut in large pieces
3 stalks of celery – cut in large pieces
1 onion, cut in slices
3 cloves of garlic - smooshed
1 can of chicken broth
1 packet of onion soup mix

Cut up all the veggies and potatoes and piled on the bottom of the crockpot, put meat on top, pour in chicken broth plus half of a can of water, then sprinkle the soup mix and away you go. Turn on low and enjoy in 6-8 hours.
