Pepperoni Lasagna Roll Ups

Good intentions - famous last words right? I was all excited about these Lasagna Roll Ups. I thought I was being all smart making them the night before, got them ready to throw in the oven the next night when I got home from work for a quick dinner. Instead? The next day got slammed with the flu. Not what I had planned on or expected. I ended up throwing the entire thing in the freezer. About a week later when we were both feeling much better (yes both, we both had the flu) we had them for a Sunday lunch. Yum. They were great. Andy said this was a keeper! Yay for a keeper recipe. :)

Pepperoni Lasagna Roll Ups
What you need!
6 lasagna noodles
1 cup cottage cheese
1 tsp dried oregano
1 tsp dried basil
48 slices of pepperoni
6 slices Swiss cheese (cut in thirds)
2 cups meatless spaghetti sauce
¼ cup shredded Parmesan cheese

What to do!
Cook noodles according to package directions; drain. Combine the cottage cheese, oregano and basil.
Lay noodle on counter flat, line with 8 pieces of pepperoni, then top with Swiss cheese. Top with cottage cheese mixture. Carefully roll up filled noodle and place seam side down in a greased shallow baking dish. Top with Spaghetti sauce and Parmesan cheese.
Cover and bake at 350 for 20-25 minutes or until bubbly.
Let stand for 5 minutes before serving.

  1. Awesome! So, you prepared them up until the point you would bake them, then put the whole shooting match in the freezer? Sounds like it worked out wonderfully. I'm starting freezer cooking, and will have to add this to the list!
