Rolling, rolling, rolling like a jelly roll


“My Grandma’s Jelly Roll” was Andy’s request for dessert for dinner with friends. Ok. So I emailed his mom, got the recipe and thought it wouldn’t be too hard. We had some of Grandma’s jam in the freezer, so it would be just like her jelly roll. Well… I highly doubt Grandma ever let her jelly roll fall off the platter and roll down her entire body, onto the floor, leaving behind a trail of jelly and powdered sugar. Also the swearing, I doubt she would have done that either. But that’s what happened to me. But dang it… I pick that sucker up and put it on a tray, added more powdered sugar and it was great. Did we tell our friends? Of course! Now we laugh… earlier? Not so much.

Grandma Derksen's Jelly Roll

What you need!
4 egg whites
1/2 cup sugar

4 egg yolks
1/4 cup sugar
1/2tsp vanilla

3/4 cup flour
1/4 tsp salt
1 tsp baking powder

1 jar of strawberry jam

What to do!
Beat egg whites until still, gradually add 1/2 cup sugar, beat until very stiff.

In separate bowl, beat yolks till thick and lemon colored. Gradually add 1/4 cup sugar and vanilla. Fold this mixture into egg white mixture and add sifted dry ingredients. Fold in carefully. Bake in a parchment paper lined jelly roll pan.

Bake in 375 over for 12 minutes. Let cool slightly, turn out on powdered sugar covered cloth. Spread with 1 jar of strawberry jam and roll. Don’t drop on the floor. Sprinkle top with more powdered sugar if desired. If dropped, sprinkle MORE powdered sugar on top.
