Atomic Cake


For years Atomic Cake was the cake we would get for my mom’s birthday. My dad would go to the local bakery buy this huge cake – with lots of layers, and we’d celebrate. This year for my mom’s birthday, she couldn’t decide what kind of cake she wanted, so we helped. Atomic Cake! But then her mom like reasoning stepped in… she didn’t want us to spend lots of money on it, they are expensive cakes. So I made one – how hard could it be? Honestly? Not too hard. The hardest part was finding the Jiffy cake mixes. You can always use half a regular cake mix and half the ingredients to make it.

The smiley face? All Andy’s idea. Entirely his idea. He felt the cake should be smiling. So it was.

Atomic Cake
What you need!
1 (9-ounce) Jiffy Mix Yellow Cake Mix, prepared and baked in a 9” round pan according to package directions.
1 (9-ounce) Jiffy Mix Chocolate Cake Mix, prepared and baked in a 9” round pan according to package directions.
1 (9-ounce) Jiffy Mix Banana Muffins, prepared according to package directions, but baked in a 9” round pan.
2 medium bananas, sliced
1 (3-ounce) package instant banana pudding mix, prepared according to package directions for a pie
About 1 1/2 cups sliced fresh strawberries
1 package strawberry glaze (found in produce section near strawberries
1 (3-ounce) package instant chocolate pudding mix, prepared according to package directions for a pie
1 (8-ounce) container frozen non-dairy whipped topping, thawed

What to do!
1. Place the banana cake layer on a cake plate, top with prepared banana pudding and sliced bananas.
2. Place the yellow cake layer on top of the banana layer. Mix together enough glaze with sliced strawberries to coat strawberries. Spread evenly over the yellow cake layer.
3. Next, place the chocolate cake layer on top of the strawberry layer and top with prepared chocolate pudding evenly.
4. Frost the sides and top of the cake with the whipped topping.
5. Refrigerate until serving time. Refrigerate any leftovers.

Makes 12 to 15 servings.
If the one layer Jiffy Cake Mixes are not available in your area, prepare half of a regular 18.25-ounce cake mix for each layer of this cake...or prepare the whole cake mix and freeze the extra layers for another time.
