Mmm cupcakes, cupcakes filled with gooey goodness. These cakes really want to be Hostess cupcakes, but they aren’t. The cream filling is really gooey. I mean making the cake full of filling goodness. I found out after making these cupcakes that I am in need of a larger start piping tip for easier frosting. Sure were a lot of circles with my “cute” little tip.
Wanna be Hostess Cupcakes
1 chocolate cake mix + water, eggs and oil as directed from package
1 pkg chocolate pudding
Mix cake mix as directed by package directions. After fully mixed, add pudding and mix until batter thickens Bake cupcakes as directed by package directions.
Cream Filling Enough to fill and decorate 24 cupcakes
2 tsp very hot water
1/4 tsp salt
1 (7 oz) jar marshmallow cream
1/2 cup shortening
1/3 cup powdered sugar
1/2 tsp vanilla
Dissolve the salt in the hot water and allow to cool.
Whip the marshmallow cream, shortening, powdered sugar, and vanilla until it begins to get fluffy. Add the water and whip well.
Especially Dark Chocolate Frosting
1/2 cup (1 stick) butter or margarine
2/3 cup HERSHEY'S SPECIAL DARK Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
Melt butter, Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
