Cookies & Cream Cupcakes

A night at the Boomsmas means we are bringing dessert and there will be cards to play. The day we made these was no different. These turned out to be awesome cupcakes – easy too. I’m sure the girls killed the boys in cards that night… Right? We always do, sometimes? Ok… really? The boys slaughter us at cards on a regular basis… but we are great losers… sometimes. At least I make a darn good cupcake… that’s something.

Cookies & Cream Cupcakes
What you need!
1 white cake mix – batter prepared as packaged directions call for
36 chocolate sandwich cookies
4 oz cream cheese
2 cups powdered sugar
1 tsp vanilla extra

Make it!
Preheat oven to 350 degrees. Place one sandwich cookie into each cupcake paper. Crush 12 sandwich cookies – stir half of crumbs into white cake batter, fill each cupcake batter to ¾ full. Bake according to the box instructions. Bake until toothpick comes out clean.
Mix cream cheese, powdered sugar and vanilla. Stir in remaining cookie crumbs. Frost top of cooled cupcakes.
