One Classy Lady...

Four years ago when I met Andy’s grandma – she was accompanied by her Oatmeal Caramelites. You see… she loved baking. I love baking. See how well we got along? Every family gathering I’ve ever been to? Oatmeal Caramelites. She made them as prizes for Bunco at Christmas, brought them to the lake for the summer family gathering, and even graduation parties
This past January we were with Grandma when she passed away. Do you know what was in her counter? Yeah… you guessed it Oatmeal Caramelites. These are special – so I make them for my special person, Andy. Here’s to you Katherine – you were one classy lady!

Grandma Derksen’s Oatmeal Caramelites
What you need!
1 package caramels
2 tbsp. milk
1 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
1 cup oatmeal
3/4 cup brown sugar
3/4 cup melted butter
1 cup chocolate chips
½ cup chopped walnuts

Melt caramels with milk in a sauce pan on stove.

Mix flour, salt, baking soda, oatmeal brown sugar and butter together and press 3/4th of the dought into a 9 x 13 pan.

Bake at 350 for 10 minutes.

Remove from oven, sprinkle with chocolate chips and walnuts.

Spread carefully with the caramel. Sprinkle remaining crumbs over the top. Bake 15-20 minutes. Cool and cut into bars.
