Yvonne and Her Stinky Cheese

Every once in a while our doorbell rings.  It’s our sweet neighbor Yvonne asking to borrow an egg or a little sugar.  One day she rang the bell asking to borrow my rolling pin – her grandkids had hid hers somewhere.  Of course!  Roll to your heart’s content!  Later that day she rang again with the rolling pin and a plate with 4 little cups on it.  I was cautious – I’m always cautious about random food gifts.   These cups?  Amazing.  Never would I have guessed the pastry crust was white bread.  Amazing what a bit of butter can do.  She couldn’t believe we liked her stinky cheese and mushroom treat.
Yvonne often asks if we’ve made her mushroom cups – and we have.  She compliments our enjoyment of her stinky cheese.

Yvonne’s Savory Mushroom Cups
What you need!

1 cup chopped onions
2 cups chopped mushrooms
3 Tbsp butter
1 cup Romano Cheese
2 egg yolks
Salt and Pepper to Taste
White Bread
1 stick melted butter

Make it!
Sauté Onion in 3 Tbsp butter add mushrooms. Salt and pepper to taste.   Remove from heat and add cheese and egg yolks.
Trim crust from bread and cut each slice into 4 pieces.  Roll Bread out as thin as possible with a rolling pin.  Dip bread into melted butter and arrange in mini muffin pan.  Fill each bread cup with mushroom filling.
Bake at 350 for 20 minutes.

  1. Just FYI, if you talk about stinky cheese with my family, you will end up with Limburger.

    1. That isn't just stinky cheese. That is the stinkiest cheese. Other stinky cheeses bow before its might.
