Frozen Strawberries Need Home

For some reason we tend to clean out our fridge and freezer around 11 at night.  Why?  Usually looking for something to thaw for dinner for the next night, can’t find it… so that tends to lead to a lot of… “What is this?”  “Why do we have this?” “Are we over going to eat this?”  “How long has this been here?”  So a week ago when this happened we found two containers of frozen cut strawberries.  What, oh what to do with these?  I googled “what do I do with frozen strawberries” – I know wild and crazy right?  I found all sorts of suggestions I wasn’t interested in.  But then – I saw this pie.  Seemed like it would be light enough, not too heavy, have a hint of cream cheese and a bunch of Cool Whip.
Used my now favorite tool – the immersion blender to puree the drained strawberries and mixed it all up.  I’d make this one again in a heart beat.  Light and refreshing – perfect for a warm summer day.

Strawberry Cream Pie
What you need!
1 8-OZ. pkg. cream cheese, softened
1/4 c. sugar
1 tsp. vanilla
1 cup fresh or frozen strawberries, mashed or pureed in blender/food processor
2 1/2 c. whipped cream or Cool Whip
Graham Cracker Crust

Make it!
Blend together the softened cream cheese, sugar and vanilla. Fold mashed strawberries into cream mixture. Fold in whipped cream. Put mixture into crust, and refrigerate overnight. Garnish with additional strawberries.

  1. Since your title says the strawberries are looking for a home, feel free to drop them off! You could even make them into the pie first :-)
