When little girls get hangry... Moms get creative

Most work days, we get to leave on time, go pick up our girl and then put dinner together, maybe play a little before we get dinner done.  This night?  We were running late from work and hardly got our girl in time before they called DCFS on us for abandonment.  We got home and our girl was a ticking time bomb of hangry - hungry/angry.  Thankfully dinner was Pizza Casserole - a quick casserole that bakes up fast.
Every pizza casserole I have ever heard of includes noodles, this one?  Baking mix.  Genius!  The same mix we use to make pancakes, makes pizza casserole.  Just add some savory spices and garlic powder and magic puffy crust.
This recipe pulled together very quickly and adding pepperoni makes for a quick meal.  You could easy add any pizza toppings you normally add to your pizzas.  Even a veggie pizza.

Easy Pizza Casserole
Ingredients
3 3/4 cup Bisquick
1 cup water
1 tsp garlic powder
1 1/2 teaspoon Italian Seasoning
1 (14-15 oz) jar pizza sauce
6 oz sliced pepperoni
1 can of mushrooms - drained
1 onion - diced
2 cups shredded mozzarella cheese
How to Make
1.Preheat oven to 375°
2.Spray a 9x13 baking dish lightly with cooking spray, set aside.
3.In a medium bowl combine Bisquick, garlic powder and Italian seasonings. Add water and stir until a soft dough forms. (If dough is too sticky, sprinkle a few tablespoons more Bisquick, if it feels dry add a tablespoon of water). Divide dough in half and drop dough by tablespoon sized portions all over the bottom of the prepared pan. Pan will not be covered by the dough. Next drizzle 1 cup of the pizza sauce on top of the dough. Then layer half of the pepperoni on top of sauce. Sprinkle half of mushrooms and onions.  Finally sprinkle half of the mozzarella cheese all over the pepperoni. Repeat this entire process again with remaining ingredients.
4.Bake 20-25 minutes. Cut into squares and serve warm.
