Skinny Cinnamon Rolls if you have #lifegoals

I tried making some Skinny Pizza Dough - which was delicious but had extra dough. I tried my hand at some Skinny Cinnamon Rolls. This was a total test and let's be honest - these are not full-on sugary, soft wonderful, fatty cinnamon rolls with pillowy cream cheese frosting on top. These are cinnamon rolls that are skinny, they are wonderful, and when you are rocking a healthier lifestyle - you can incorporate them into your day without too much fuss. They have whipped cream cheese on top - so while not frosting, it does give you some cream cheese topping. My family all liked these too. I would not hesitate making them again.

Skinny Pizza Dough Cinnamon Rolls
1/2 - 3/4 cup water
1 teaspoon yeast
1/2 teaspoon salt
1/2 cup plain Greek yogurt
2 cups self-rising flour

Filling
1/4 cup brown sugar substitute (Truvia)
1 tsp cinnamon
Butter Spray or Pam

In a bowl, mix the flour, salt and yeast together. Stir in the yogurt and mix until it starts to combine. Add up to 3/4 cup of water until combined. Start with 1/2 a cup and see how much of the flour is being incorporated. If there is still a bit of loose flour in the bowl, add a couple tablespoons of water at a time, until it forms a ball that you can roll out and knead on your counter.
It might be a bit sticky - but place just a couple tablespoons of flour on your counter, and work that into the dough - it won't be sticky anymore.
The night before, roll the dough out flat, spray with butter spray. Mix brown sugar sub and cinnamon together, springing on top. Roll tight and slice into rolls. Place on parchment paper or baking sheet and cover with a towel. Place in the oven overnight with light on.
The next morning, remove the towel, preheat oven to 350 degrees. Bake rolls until brown and delicious. Top with whipped cream cheese.
