Taste Testers Approve - So many thumbs up, all the thumbs.

Another Tuesday, another rough day. Why? Why are Tuesdays so hard? I just don't know. It was foggy and rainy out, it's like the kids knew we couldn't go outside, we all even slept like junk, just not a good start. School didn't go great, no outside walk or ride. It felt like we needed to bake. I knew my dad was coming the next day to do some Mr. Fix it stuff around the house for us (even down two fingers thanks to a table saw oops - they still there, just shorter now). Anyway, I wanted to make sure his sugar levels were good (I’m a helper tiger)- so what better to do than bake? Nicholas was all about his tablet - which honestly makes things easier - so Bronwyn and I whipped up this basic but delicious dough. We ate a lot of dough... so good. These bake up really fast, 17 minutes for the whole pan. While we made them for our helpers, we had to taste test right? Dessert after dinner seemed the perfect time to taste them - we approve. Oh wow do we ever approve! Andy had to try two just in case the first one wasn't a good example... we approve of these yummy bars! Make them, enjoy them, try not to eat too much dough.

Chocolate Chip Cookie Bars
1 1/2 cups softened (I use salted) butter (3 sticks)
1 cup plus 2 Tablespoons granulated sugar
1 cup plus 2 Tablespoons brown sugar
3 large eggs
1/2 Tablespoon Vanilla
3 1/2 cups flour
1/2 Tablespoon baking soda
1 teaspoon salt
3 cups chocolate chips

Prepare a 17x12 inch cookie sheet by spraying with cooking spray. Preheat oven to 375.
Beat butter and sugar with an electric mixer until creamy and fluffy.
Add eggs, one at a time, beating in between, then add vanilla, the flour, salt, and baking soda, mixing well.
Gently fold in the chocolate chips
Spread batter into prepared pan. Bake for 17-18 minutes or until golden brown. These are easier to cut while warm.
